here's my recipe for my banana/oatmeal muffins - actually the original recipe is for oatmeal muffins, i just had bananas i had to get used up one day, mushed them up and added, and voila!

up until today i've always made muffins, but the loaves turned out great, so i'll give my bake times for both.  for my loaves today, i doubled the ingredients and got 3 of my bread pans - these pans are my mother's and she had them for as long as i can remember.  they measure 7 1/4x3 1/2 rather than today's standard 9x5 bread pan.  therefore i am assuming that a single batch of this recipe will yield ONE loaf of bread.

1 cup uncooked quick oats
3/4 cup milk
one medium (or 2 small) overipe bananas  (i tend to buy the smaller bananas for wren)
1 1/4 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, beaten
1/2 cup brown sugar - either dark or light, either one is good
1/4 cup vegetable oil (sometimes i substitute an equal amount of unsweetened applesauce for the oil - adds an extra "layer" of flavor )

Preheat oven to 400 degrees Farenheit.
Grease or line 12 muffins cups (or one 9x5 bread pan).
Combine the oats and milk in a bowl & set aside.
Mash your banana really well and set aside.
Combine your flour, baking powder and salt.
Add your egg, brown sugar & mashed banana & oat/milk mixture - mix all until everything is moistened.
Spoon into muffin cups about 3/4 full or into one bread pan.
Bake for 20 minutes for muffins or until an inserted toothpick comes out clean.  Bake time was 40 minutes in my small bread pans, so i would guess 50 minutes for the larger pans - just keep a check on them of course
Remove from pan to wire rack to cool.
While warm, spread with butter and ENJOY!!!!
