This is a recipe from Robin Hood kitchens  www.robinhood.ca

Raspberry Oat Muffins

Ingredients:

1 cup (250 mL) Robin Hood® or Old Mill® Oats
1 cup (250 mL) buttermilk
1 cup (250 mL) Robin Hood Whole Wheat Flour
1 tsp (5 mL) baking powder
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) baking soda
3/4 cup (175 mL) brown sugar, packed
1 egg, beaten
1/4 cup (50 mL) butter, melted
1 cup (250 mL) raspberries

Directions:

1. Combine oats and buttermilk in small bowl. Let stand.
2. Combine flour, baking powder, baking soda, salt and brown sugar in mixing bowl. Stir well to blend.
3. Add egg and melted butter to oat mixture. Mix well.
4. Add oat mixture all at once to dry ingredients. Stir just until moistened. Gently fold in raspberries.
5. Fill greased muffin cups 3/4 full. Bake at 400ºF (200ºC) for 15 - 22 minutes or until top springs back when lightly touched.

 Gerda - hope you enjoy - I have also used fresh or frozen blueberries - also yummy.

Frozen blueberries are in the freezer and it's just cold enough outside that having the oven on this morning will be great.  DH will love this treat - we've been limiting our starches lately, but this recipe sounds so delicious, my mouth is drooling already!  Thanks Gerda!   Sandy

Well, Sandy, look at it this way instead - you're getting oats, which are great for the cholesterol! and I make small ones, they barely come to the top of the pan (regular sized cupcake pan), so it's a small portion too. I get about 16 muffins out of this recipe. (Add water to the empty cups to prevent warping in the oven.

oooohhhh... yummy! these sound delicious! I bet their wonderful with any kind of fruit... raisins, cranraisins, blueberries, or even diced apple. I think I'll have to go get me some flour... I'm totally Out right now....

thanks for sharing , Gerda... and I agree... as long as you don't add this to a big bowl of cereal, it should be just right for breakfast. have you tried it with a little less sugar? I might have to add a little cinnamon as well.... it's good for diabetes, you know?

Denise, maybe one of these days I'll make these with apple, then the cinnamon would be an excellent addition, though I have heard it's good for you at any time - I just can't see myself adding it to everything, though lol

Like I said, I have made these with blueberries, hubby loved 'em! And you're welcome :)

You are so right, Gerda!  They are just the right small portion - as long as you only eat ONE!!!  But they're so tasty, it's hard to stop.   We got 16 small muffins and 2 large ones - ran out of cup cake liners and had to use custard cups for the 2 large ones.      Today, I froze 4 gallons of fresh apples, so next time it's going to be made with apples and cinnamon too.  (I've been adding cinnamon to my coffee grounds before I make coffee)  Tastes kind of different and I love the smell.     Thanks again for the recipe Gerda.   Sandy

You're welcome, Sandy. See, we don't have that problem - I bake them, put them in the freezer, and hubby has one for breakfast - he's trying to lose weight, but also watch the cholesterol - he has high blood pressure, too (and three of his four brothers have already had multiple bypass surgeries). He regulates (most of the time) how much he eats. I tend to eat bran muffins myself more than the oat ones, but I do need to start - my triglycerides were up last doctor visit - I think I'll also make some cookies again.

I think they will taste GREAT with apple and cinnamon, almost like apple pie, but healthier.
Wow, that's a lot of apples! Mom never froze apples, just applesauce - does that work like freezing berries?
