Subject: Light Cheesecake

Bossman’s Cheesecake (Chilled) 

1 c milk

2 pkg whipped topping mix:

½ c cold water

2 env Knox gelatin

¾ c milk

½ c sugar

250 g pkg Cream Cheese, room temp, cut into at least 8 chunks

 

In large mixer bowl whip milk and topping until really stiff:

In blender dissolve water and gelatin.

In microwave heat milk and sugar for I min. Stir to dissolve sugar: Add to blender.

Buzz quickly to blend. Add cream cheese to blender. Blend until smooth.

Pour blender contents into whipped topping.  Whip until uniform, scraping bowl as needed.

Pour unto Shortbread Crust. Optional Crust: Graham Wafer When set cut into 18 pieces.

Top with 1 tin pie filling of desired flavor.

 

Shortbread Crust:

1/2 c margarine

1 c flour

2 tbsp sugar

Melt margarine. Stir in flour and sugar.

Press into ungreased 9 x 13" pan.

Bake at 375 for 15 min. Cool.

Just a little explanation on the name. We held a contest to name our restaurant. Vern's habit was to call people "Boss." Remembering names is not a strong suit of his. The name Boss in several formations were submitted. We choose Bossman's Restaurant. The big prize: A large pizza of their choice. It was the take put pizza business that mushroomed into a rather nice (if I say so myself) sit down restaurant complete with liquor licence. It was possible only because the original business, the laundromat, bus stop and arcade just used the first portion of the building. I became chief cook and bottle washer. This was in a town of about 750.
