Subject: Chipotle Farfalle (aka BowTies)

As requested by the Retreaters, here's the recipe for Chipotle Farfelle. 


  • 2 tbsp. pepitos (pumpkin seeds) or more as you like
  • 2 cloves garlic, minced (about 2 tsp)
  • 1/4 tsp chipotle powder (McCormick's sells this)
  • 1/4 tsp salt
  • 1 cup cilantro leaves, chopped (or parsley or spinach or other green if you don't like cilantro)
  • 3 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp lime zest (if you have it)
  • 1/2 cup crumbled feta cheese
  • 10 oz farfalle (Bow Ties) or other small pasta

Serves 4 -- 30 minutes or less originally from VEGETARIAN TIMES


Toast pepitos in small skillet over medium heat until browned, 3-4 minutes, shaking often. Set aside.  Combine garlic, chipotle powder and salt in small bowl.  Add cilantro, lime juice, olive oil, and lime zest.  Fold in cheese.  Cook pasta according to package.  Drain.  Toss hot pasta with sauce in large serving bowl.  Taste and adjust seasonings as needed. Mix in pepitos or sprinkle on top.  Serve.

per serving 448 calories, 12 g protein, 15 g total fat (4 g. sat) 64 g carb, 19 mg chol, 533 mg sodium, 3 g fiber, 1 g sugars.
