7lb. 4-6 inch cucumbers sliced 1/4 to 1/2 inch 1 gal. water 1c. hydrated lime (in the canning section usually)
Put lime in water and soak cucumbers in lime water for 24 hrs. The lime will settle so I usually press down on the cucumbers until the water is milky every few hours. After 24 hrs. rinse and let stand in clear water for 3 hrs. Drain and rinse.
1 1/2 qt. vinegar (5%) 1 tsp. celery seed 1qt. water 1 Tbsp. salt 9c. sugar 1 Tbsp. pickling spice
Mix these ingredients in a saucepan and bring to a boil. Pour over pickles and let stand 24 hrs. Drain syrup into a large pan and let come to a boil. Add pickles and simmer 30 min. Put in glass jars and process in boiling water bath for 10 min. I do this for quarts and pints.
